Coffee Meringue Kisses for Dad

Every Mother’s Day my husband asks me what I’d like to do. For 13 years my response has been the same. “24 hours in a hotel room by myself please.” I’m yet to receive this wish and doubt I ever will because Mother’s Day is all about the kids isn’t it?

Every Father’s Day I ask my husband the same question. For 13 years he has asked for a sleep in, a late breakfast followed by a long lunch. Every year he receives his wish because, unlike Mother’s Day, Father’s Day is all about the Dad isn’t it? Sigh…

This Sunday will no doubt be the same. I will get up at 4.00am to put on a slow roast shoulder of pork. Green beans and Brussells Sprouts will be trimmed and scored. I’ll make applesauce. Red will be uncorked, the table set and candles lit. The kids may, or may not help. Hmm, maybe I’ll provide all this OR maybe he can mow the lawn, clean the pool, scoop the poop, fix the wonky microwave door and make us all a cheese toastie. He will then be allowed to fall asleep in front of the TV whilst watching The Guns of Navarone for the seventy-billionth time.

What the kids and I will do is indulge his love of coffee. He has nearly every type of Nespresso capsule and has set up his own little cafe in the corner of the kitchen. So my 11-year-old daughter Grace and I have used capsules to create a delicious mid-morning treat for Sunday.  This recipe is dead easy. Give it a try. The meringues will store in an airtight container in the pantry for up to a week.

Nespresso Coffee Meringue Kisses

Ingredients

  • 1 Nespresso capsule of your choice (we used Fortissio Lungo)
  • 1/2 cup caster sugar
  • 1/4 teaspoon cream of tartar
  • 2 egg whites

Instructions

  1. Preheat your oven to 100c (convention not fan-forced).
  2. Place baking paper across two flat baking trays.
  3. Cut open the capsule and put the ground coffee into a bowl with the caster sugar. Mix to combine.
  4. Put the egg whites into a separate bowl and beat with an electric mixer until soft peaks form.
  5. Add the coffee/sugar mix bit by bit until all is combined and the meringue is stiff and glossy.
  6. Using a teaspoon or small piping bag, spoon the mixture in little blobs onto the baking trays, leaving at least two centimetres space around each.
  7. Bake in the oven for about 30 minutes, until the meringues are just hard to the touch.
  8. Remove and allow to cool completely.
  9. Serve with a huge milky latte and a squishy hug.

    This recipe sounds to good not to try Nespresso Meringue Kisses just added to the repertoire!
    Long, slow roasted pork for fathers day sounds just the trick. What father doesn’t love a long lunch?

    Hi Caro! I’ll definitely be making these Meringue Kisses on Fathers Day! We were going to picnic on Sunday but the weather forecast is for rain, so instead we are lunching at the RSL. 🙂

    I love it! Definately going to be giving these a try, I have always been a little afraid of meringues. We are going to celebrate with a lovely tapas lunch, lots of fun cooking followed by lots of eating, and I will be doing the washing up with the girls. Thanks for the inspiration

    On Father’s Day I’ll be doing what I’ve sadly been doing every Father’s Day since 1980, which is visiting my Dad’s grave at the cemetery and having a one-way chat with him. 🙁

    Yum! The meringue kisses look incredible & so easy. With Dad overseas this year we will be celebrating Father’s Day at a later date…But in the same way as always – a strong coffee and vegemite on toast, delivered to bed atop a new book (the “go-to” present).

    I am off the hook this father’s day as my husband has to work and my Dad doesn’t believe in it!!! I will cook my husband his favourite dinner though… a small concession since he has to work a 12 hour shift!

    Oh those meringues look incredible, can’t wait to try them. This Sunday we’ll be hosting a lunch for my hubby and father-in-law. Mr 6 has decided to give his Daddy some of his Lego for Father’s Day. It’s the sweetest gesture because his Lego means everything to him so this is truly a gift from the heart. We’ll have a family lunch and if the weather is good we’ll head down to the beach for the afternoon. Just a relaxing family day.

    wow what a fab prize!!!!! my husband will be working that afternoon and waking late after a night shift so probably all we will have time for will be a quick lunch and the boys will give the gifts they made at school. Luckily that is all he expects. I usually make a picture collage as a card as well 🙂

    Well my twins couldn’t wait to give their handmade Father’s day presents to Daddy so he got them tonight, guess it’s up to me to provide another gift or 2 on Sunday. I will probably cook breakfast, let him sleep in and then sweet talk him into mowing and finishing off our outdoor stage for the kids…because it’s all about the kids isn’t it? Oh that’s right, that’s Mother’s Day I’m thinking of…oh well I’ll make sure to at least make him a hot cup of instant coffee with breakfast…think he would be in heaven if i presented him with an actual real coffee and a meringue 😉

    We’ll be spending the day celebrating with my hubby (who is an awesome Dad), my Dad and my niece who is turning 18 🙂 Lots to celebrate and a great excuse to spend time as a family.

    Father’s Day (and Mother’s Day) are always so busy trying to spend time with my own husband and both of our fathers.

    Breakfast with my dad and lunch with my father in law. My husband has a ‘thing’ for icecream, so I’m hoping we find the time to take him to a funky new ice-cream place in Fitzroy. Maybe I’ll let the kids go to bed late so we can fit it in.

    But he also has a huge stash of coffee pods- so we might make a batch of these kisses too.

    Your post made me laugh – so true about the difference between Mothers Day and Fathers Day! The kids will spoil him with a mix of home made and bought presents ( he likes a good book and fudge) after he comes back from work as he’s working an early shift Sunday. We will probably go out for coffee if it’s not too late and later have a roast for tea. If he’s lucky he might get a preside off me when the kids have gone to bed! 😉

    Well, this bums Me out! Mother’s Day in My house, is about MOM! And donnnnnnnn’t You Forget it! LOL Although Mothers are celebrated each and every day, (for they are the glue that holds the tight little Family Unit together!), We still deserve to be pampered, and get what We ask for! Something to work on for next Year Angus and Grace! Book that luxury suite for Mum on Your own. You have a whole year to do odd jobs to make enough money. Oh heck, just ask Dad for the money!!! LOL

    P.S. Why are Our Mother’s Day at different times? I always thought that was a Universal thing! DOH

    I was intending to have a BBQ with my lovely wife and 3 children, make a takeaway cappuccino and walk down to the playground and spend time with the family.
    However this didn’t eventuate.
    While in our local hardware store the day before Father’s Day about to buy some BBQ supplies our little fella tripped over and I stepped on him and lost my balance and fell onto the cement floor on both my knees.
    (Only 8 weeks earlier I tripped over our daughters toy pram and fractured my right knee)
    So I had another trip (no pun intended) in an ambulance to the hospital.
    I was released that night however the next day on Father’s Day I spent the whole day in bed.
    I’m still waiting for an MRI scan to be done to find out the results.
    The Nespresso Coffee Meringe Kisses would compliment my Linizio Lungo cappuccino and I’ll have to ask my wife nicely if she’ll make them for me so I can enjoy them during my recovery process.
